chicken long rice

is "chicken long rice" or "Long Rice." Props to the Chinese for this dish of all luau dishes. Why? Worst Case Scenario: we give up trying to eat the sour poi, dry laulau, and too salty lomi salmon; long rice saves the day. Maybe originating from Chinese plantation working gentlemen that needed to impress Hawaiian girls at a family luau. They found a dish that was tasty, economical (cheap), and ingredients readily available. Needless to say, it's paid off well for them. Nearly all Hawaiians got Chinese and the rest of us love chicken long rice. Hint: Make the broth and noodles separate, then mix'um before it goes out.
